Chargrilled zucchini with garlic & mozzarella
Put a new twist on a vegetable favourite

Ingredients
- 2 zucchini sliced thinly lengthwise
- 1 clove garlic chopped
- .5 onion sliced
- .5 cup fresh mozzarella sliced
- 1 tbsp olive oil
- salt, pepper, chilli flakes and thyme sprigs, to serve (optional)
Instructions
- Heat barbecue grill to a medium heat. Toss zucchini, onion and garlic together with olive oil in a large bowl. Toss vegies onto the barbecue and grill, turning the zucchini after a few minutes, until softened.
- Turn barbecue off and leave to cool for a few minutes. Then add mozzarella slices and toss, so mozzarella melts slightly.
- Season with herbs and spices and serve immediately with your choice of protein.
Notes
- This is a really versatile recipe that will go with any number of protein options including fish, chicken, beef or pork.
- Serve additional serves cold, paired with any leftover meat, beans, fish or eggs you have in the fridge.
