Not Quite Greek Salad
Whip up this beauty in no time – not quite Greek so it's suitable for the pre-op phase.

Ingredients
- 3 cherry tomatoes quartered
- 1 baby Quke or 1/2 Lebanese cucumber diced
- 1/4 small red onion sliced finely
- 1 cup lettuce leaves torn
- 1 mini red capsicum or 1/2 small red capsicum diced
- 50 g olives of your choice kalamata or green Sicilian olives work well
- 1/4 tsp dried oregano
Dressing
- 1 small garlic clove minced (or 1/2 tsp minced garlic)
- 1/2 tsp dried oregano
- Salt
- Freshly ground black pepper
- 1 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil preferably Greek!
Instructions
- Place Greek Salad Dressing ingredients in a jar and shake until well combined. Set aside for 20 minutes to let the flavours infuse.
- Place all of the salad ingredients in a bowl and pour over dressing. Toss to combine. Serve immediately!
Notes
- This is a really versatile recipe that will go with any number of protein options and is suitable for the pre-op VLCD diet.
- Make more and store single serves of the salad ingredients in a jar in the fridge – just don’t add the dressing until the last minute so it doesn’t go soggy!Â
- Make this into more of a traditional Greek salad by adding a good quality Greek fettaÂ
- If you’re feeding others, 2-3 bariatric serves are equal to one regular, non-sleeved serve. Use the slider above to adjust the serving sizes you need.Â
