This really is a breakfast star. Sourdough toast topped with avocado, tomato and ricotta. YUM!

- 1 slice sourdough bread
- 2 tbsp ricotta cheese
- 1/4 small avocado diced
- 1 roma tomato diced
- 1/3 tsp olive oil
Instructions
- Toast the bread.
- Top with ricotta, avocado & tomato.
- Drizzle with olive oil and season with salt and pepper to serve.
