Tomato, Basil & Bocconcini Salad
A classic Italian that tastes as good as it looks!

Ingredients
- 1 tbsp extra virgin olive oil
- 1 tbsp Balsamic Vinegar
- 1/2 garlic clove crushed
- 1/2 teaspoon caster sugar
- 300 g vine-ripened tomatoes thickly sliced
- 100 g baby bocconcini drained, sliced
- 1/2 cup fresh basil leaves
Instructions
- Place the oil, vinegar, garlic and sugar in a small screw-top jar. Season with salt and pepper. Shake until well combined.
- Arrange the tomato and bocconcini on a plate. Top with the basil and a few kalamata olives if you like. Drizzle over the dressing to serve.
Notes
- Pair this salad with additional protein of your choice – chicken, fish and beef work well.
