Zucchini, Mint & Haloumi Fritters
These fritters are quick and easy to make and oh so versatile!

Ingredients
- 500 g grated zucchini wring the moisture from it using a tea towel
- 1 red onion finely chopped
- 1 clove garlic crushed
- ¼ bunch mint leaves chopped
- 180 g haloumi chopped finely
- 1 lemon zested
- ½ tsp salt
- 1/2 tsp Ground black pepper
- 3 large eggs slightly whisked
- 1/3 cup plain flour
Instructions
- Combine the zucchini, onion, garlic, mint and haloumi together in a large mixing bowl or food processor. Add the zest, salt, pepper, eggs and mix to combine. Lastly add the flour and mix well. The mixture should have the consistency of a pancake batter so add more flour if you feel it's necessary.
- Add a little olive oil to a fry pan and heat over a moderate heat. Add the batter (1-2 tablespoons at a time depending on the size you want) and cook until brown, carefully flipping.
Notes
- Serve with a little hummous, tzatziki, Greek yoghurt and/or smoked salmon to increase the protein further
