Lemon Feta Chicken

Ingredients

  • 1 medium chicken breast fillet trimmed
  • 50 g feta thickly sliced
  • 2 sprigs oregano
  • 1/2 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • 1/2 punnet of cherry tomatoes
  • 5 kalamata olives
  • 1 cup sweet potato mash to serve

Instructions

  • Preheat the oven to 180C.
  • Place chicken in a baking dish then top with the feta, oregano, tomatoes, olives, lemon zest and juice. Season and sprinkle with olive oil.
  • Bake for 18 minutes, or until chicken is cooked through. Serve with mash.
