Ingredients

  • 1 egg
  • 2 tbsp whole wheat or coconut flour
  • ¼ cup high protein low-fat yogurt
  • 1 scoop vanilla or chocolate protein powder
  • 1/2 tsp baking powder
  • A pinch of salt
  • A pinch of cinnamon

Instructions

  • Whisk together the egg, flour, yoghurt, protein powder, baking powder, salt and cinnamon until smooth.
  • Spray a frying pan with cooking spray or add a little butter and place the pan over high heat.
  • Spoon the pancake batter into the pan to make 4 small pancakes.
  • Cook for 2-3 minutes until browned then flip and cook for a further 1-2 minutes.
  • Serve warm with berries, extra yogurt or honey as desired.

Notes

  • I've made this using Boomers Whey Protein Isolate and it worked really well, but you might need to play around a little with your protein powder to find the best combination.

  • If you're feeding others, 2 bariatric serves are equal to one regular, non-sleeved serve. Use the slider above to adjust the serving sizes you need.
