Chocolate Peanut Butter Protein Balls

These chocolate peanut butter no-bake energy bites taste just like a cookie, although they are high in protein and naturally sweetened.

Ingredients

  • 1 cup rolled oats
  • 2/3 cup toasted coconut flakes
  • 1/2 cup natural peanut butter
  • 1/2 cup almond meal
  • 1/3 cup honey
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon chia seeds optional
  • 1 teaspoon vanilla extract

Instructions

  • Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and chill in the refrigerator for 20 minutes to make the mix easier to handle and mould.
  • Once chilled, roll 1-2 tbsp into balls. Store in an airtight container and keep refrigerated for up to 1 week.

Notes

  • If the mix seems to dry, add in an extra tablespoon or two of honey or peanut butter.
  • If the mix seems too wet, add extra rolled oats.
  • Increase the protein further by added a couple of scoops of clear tasteless protein powder before mixing the ingredients
