Zucchini, Mint & Haloumi Fritters

These fritters are quick and easy to make and oh so versatile!

Ingredients

  • 500 g grated zucchini wring the moisture from it using a tea towel
  • 1 red onion finely chopped
  • 1 clove garlic crushed
  • ¼ bunch mint leaves chopped
  • 180 g haloumi chopped finely
  • 1 lemon zested
  • ½ tsp salt
  • 1/2 tsp Ground black pepper
  • 3 large eggs slightly whisked
  • 1/3 cup plain flour

Instructions

  • Combine the zucchini, onion, garlic, mint and haloumi together in a large mixing bowl or food processor. Add the zest, salt, pepper, eggs and mix to combine. Lastly add the flour and mix well. The mixture should have the consistency of a pancake batter so add more flour if you feel it's necessary.
  • Add a little olive oil to a fry pan and heat over a moderate heat. Add the batter (1-2 tablespoons at a time depending on the size you want) and cook until brown, carefully flipping.

Notes

  • Serve with a little hummous, tzatziki, Greek yoghurt and/or smoked salmon  to increase the protein further
