Sesame Chicken & Spring Greens Bowl

Ingredients

  • .5 tbsp sesame seeds
  • 250 g chicken tenderloins
  • 1 tbsp peanut oil
  • 2 tbsp soy sauce
  • 1 tsp ginger grated
  • 1 clove garlic crushed
  • 100 g frozen edamame
  • 1 small avocado
  • 2 radishes
  • 100 g sugar snap peas
  • .25 bunch coriander leaves picked

Instructions

  • Coat the chicken with sesame seeds. Heat peanut oil in a large frying pan over high heat. Add the chicken and cook for 2-3 minutes each side or until brown and cooked through. Transfer to a plate, rest for 5 minutes then slice.
  • Meanwhile, combine soy, sesame oil, ginger and garlic in a bowl. Place edamame in a bowl and cover with boiling water for 3 minutes or until tender. Drain then refresh under cold water.
  • Divide edamame, avocado, peas, chicken, radish and coriander between bowls. Serve with soy dressing.
