Tomato, Basil & Bocconcini Salad

A classic Italian that tastes as good as it looks!

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 tbsp Balsamic Vinegar
  • 1/2 garlic clove crushed
  • 1/2 teaspoon caster sugar
  • 300 g vine-ripened tomatoes thickly sliced
  • 100 g baby bocconcini drained, sliced
  • 1/2 cup fresh basil leaves

Instructions

  • Place the oil, vinegar, garlic and sugar in a small screw-top jar. Season with salt and pepper. Shake until well combined.
  • Arrange the tomato and bocconcini on a plate. Top with the basil and a few kalamata olives if you like. Drizzle over the dressing to serve.

Notes

  • Pair this salad with additional protein of your choice - chicken, fish and beef work well.
