- 1 cup pitted dates soaked in boiling water for 10mins
- 1 cup walnuts or almonds
- 1 cup almond meal
- 2 tbsp cocoa powder or chocolate protein powder
- 2 tsp chia seeds
- 1 tbsp instant coffee in 60ml boiling water or 1-2 espresso shots
Blend nuts, almond meal and chia seeds in a food processor
Add cacao, dissolved coffee and dates and blend until well combined (you may need to scrape down the sides a few times).
Spoon heaped teaspoons of mixture into balls and roll in coconut if you’d like.
Store in fridge for 10 days, or freeze.
